Rye High

A coworker mentioned he check out this deli / bar not too far from work that had delicious smoked meats, he did mention that sandwiches were a little pricey, but did not think much of it.  A few weeks later, a couple engineers from the office ventured over to Rye off of Hennepin in Uptown Minneapolis.

  First thing that caught our attention was the cost of sandwiches, most everything was $11-14 for a sandwich that came with a couple pickle slices and small cole slaw on the side.  Everything looked and sounded pretty good, but one engineer opted to just watch rather then eat based on price.


I got their Montreal Smoked Meat sandwich (Pastrami).  The sandwich came out on the plate, not overly substantial in size, nor did it have much for curb appeal on the plate, pretty simple and drab looking for the price.  The quality of the meat was very high and very tasty, but the rest of the sandwich did not knock me off my feet.  The pickles were obviously homemade and pretty tasty, but the cole slaw was very oily, not my cup of tea.  Overall, pretty good sandwich, I give it a three, maybe higher (3.5) if it didn't cost so much or I got a bigger portion.

One co-worker got a sandwich called the Jubano, looked much tastier and fancier then what I got, little more bang for the buck.  I did not try it, but he said it was great.  Some day in the future, I'll likely get the Jubano on someone else's dime ;)

Solid Tortellini Alfredo from Casa Nostra

I am not big in to Italian food, but my wife is, so when there was a $25 for $50 deal for Casa Nostra in Lakeville I picked a couple up because I knew my wife would like to try it and I can stomach just about anything at half off.

I have had their Tortellini Alfredo with added sausage now on two occasions and enjoyed it very much.  The sausage adds a nice spice and flavor to the dish, while the Alfredo is not overly creamy and the cheese in the tortellini was very tasty. I give the dish a very respectful rating of three.
The picture is actually a half serving that was on the special one night, made for a perfect portion before heading out to a movie afterwards.

Other notes, kids spaghetti was very good.  My wife has enjoyed several other pasta dishes, but I'd strongly recommend against the Beef Panini (dry and not flavorful).  They have a nice looking bar as well.

Disney's Flyng Fish Cafe was Delightful

Back in early April a work conference brought me to the Disney Yacht Club near Orlando, FL.  Overall, very busy and many of our breakfasts and lunches were catered in as part of the conference and for the most part were pretty standard but good, they always have awesome fresh fruit!

My one evening out with a co-worker, we hit up the Flying Fish Cafe, part of the Disney Boardwalk, not too far from Epcot.  It was fairly busy, but were were able to get a nice pair of seats at a bar that looked into the kitchen, made for an entertaining dining experience.

We got things started with a Yellowfin Tuna Tartare and crispy Tempura Tuna-Vegetable Sushi Roll appetizer.  This thing was super delicious, only complaints that is was only 3 pieces and hard for two to split equally and wish we would have got two!


For dinner, I ordered the Signature Flying Fish CafĂ© “Potato-wrapped Red Snapper.  It was quite flavorful and cooked perfectly.  Really no complaints other then after seeing the filet sized Char Crusted Tuna that my buddy ordered, I really wish I had ordered that.  He said it was awesome.

Overall, fun dining experience, very nice and good food with out being stuffy.  I'd give my meal a 4, probably would have been a 5 if I'd ordered the tuna!

Tasty Tuna at French Meadow Bakery

Due to my work life, I get to eat my share of meals while moving through MSP (Minneapolis-St. Paul) airport.  The airport did just go through a big makeover, getting rid of some staples like McDonald's and Burrito 360.

Trying to eat a bit healthier, I swung in and got a Grilled Tuna Sandwich to go from French Meadow Bakery in the main terminal (they do have other smaller store fronts in the airport).  I very much enjoyed it, it was light and flavorful and the side salad was very good.  Although not cheap or super fast, really good food.  I'd give this sandwich a solid rating of 3 and would get it again when in the mood.

I've also had their breakfast sandwiches in the morning, good stuff!  If you are a vegetarian, which I do not condone, they have lots of options!  If you are looking for something reasonably healthy, check out French Meadow at MSP.  Good place to grab a Naked Juice as well.

Big Kodiak was a Big Flop

On a recent trip to Brainerd, MN took the family to Grizzly's Wood Fire Grill along with some friends. They had chicken and beef going on a rotisserie that looked pretty good, but for some reason my mind was on a burger. Feeling pretty hungry and needing some fuel to chase my kids around the water park, I landed on the Kodiak Burger. On looks it scored as easy 4, but taste did not match up with how it looked. See description from menu below, sounds good, right?

onions, lettuce, and tomato. Not for the meek!

I guess the fixings on the burger were actually pretty good, but the burger itself was so dry and flavorless, nothing was going to overcome that. It obviously was a premade frozen burger from some food service distributor and I am pretty sure it was pre-cooked and just reheated. I honestly have not had a burger this bad in quite some time. Definitely could not score my burger any higher then a one.

My wife got the Bear Creek Pasta, looked good, but she felt it was nothing special, but not terrible either. Kids got chicken fingers and mini-corn dogs, they seemed pretty good. The other couple got the Smoked Brisket meal and Avocado Bacon Ranch sandwich, they were pretty satisfied with their meals. Might have to go to Famous Dave's or Buffalo Wild Wings next time I need food in Brainerd/Baxter area.

Perfect Turkey Every Time

I cooked a turkey for the family this year at Easter (we are not a big ham family), it came out golden brown and juicy, with lots of flavor. Several family members reactions were, WOW, as in, I didn't think turkeys could be this juicy and flavorful, as in, the other 80 turkeys I have at at family events have been dry and forgetful.

My first turkey was probably only 3 or 4 years ago, before I cooked my turkey, I did a little research on the internet and remembered an episode of Alton Brown's show Good Eats from The Food Network. Alton puts a good bit of science behind his cooking and his strategy nails a perfect turkey every time. In summary, low & slow is not the ticket & ignore that plastic button that comes with your turkey. I have yet to try his brine, as my turkeys have been great with out it thus far.

Ingredients

  • 1 (14 to 16 pound) frozen young turkey

For the brine:

  • 1 cup kosher salt
  • 1/2 cup light brown sugar
  • 1 gallon vegetable stock
  • 1 tablespoon black peppercorns
  • 1 1/2 teaspoons allspice berries
  • 1 1/2 teaspoons chopped candied ginger
  • 1 gallon heavily iced water

For the aromatics:

  • 1 red apple, sliced
  • 1/2 onion, sliced
  • 1 cinnamon stick
  • 1 cup water
  • 4 sprigs rosemary
  • 6 leaves sage
  • Canola oil

Directions

2 to 3 days before roasting:

Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.

Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.

Early on the day or the night before you'd like to eat:

Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining.

Preheat the oven to 500 degrees F. Remove the bird from brine and rinse inside and out with cold water. Discard the brine.

Place the bird on roasting rack inside a half sheet pan and pat dry with paper towels.

Combine the apple, onion, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.

Roast the turkey on lowest level of the oven at 500 degrees F for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F. Set the thermometer alarm (if available) to 161 degrees F. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let the turkey rest, loosely covered with foil or a large mixing bowl for 15 minutes before carving.

So sleep in, use a thermometer and follow the directions, and wow your guests!

Loco for Doritos Locos Tacos

These new tacos from Taco Bell immediately intrigued me from the very first commercial I saw. What is not to love? Doesn't everybody love Doritos and tacos? Match made in heaven right?

Last week, had a quick lunch meeting with a buddy, I went for the Doritos Locos Tacos Big Box which came with one of the namesake tacos (Doritos Taco Loco Supreme), a burrito, and another taco. For good measure, I threw in a favorite standby of mine, a beef supreme chalupa.

They definitely did a good job of getting the nacho cheese Doritos flavor across and it was actually pretty tasty and a nice change of pace if you like crispy tacos from Taco Bell. I did like them, but not sure I get a whole case of just these.

Overall I give it a thumbs up, probably eat it again and a rating of 3!
